I am making a Goan Dinner this Sunday. I am not overly fond of cauliflower, but I have some diners who are on-again/off-again non-starch-eaters. I needed a dish to fill them up, if this was an off day. I decided a Goan cauliflower dish was what I needed. In the rest of India ghee—clarified butter—is the cooking fat of choice. In Goa they prefer to use coconut oil.

Karl’s Annatto Cauliflower
I am doing a fusion Mexican theme this Labor Day. Spices from South of the (U.S.) Border, but in ways that are probably non-traditional. As an additional vegetable dish I decided on cauliflower. As I was looking around I saw that someone had used annatto to make a bright red cauliflower. That gave me ideas.

Karl’s “Potato” Salad – Two Ways
These salads are based on my mother’s potato salad, but the kids are coming over and this is a dilemma. They are on the Atkins diet, which means no potatoes. I decided that I would make two almost identical salads: One with potatoes for those of us eating starchy foods and a second with the potatoes replaced with cauliflower.

Karl’s Southern Roasted Brussels Sprouts and Cauliflower
I am making ham steak for this Sunday’s dinner. Miriam requested cauliflower and Jan loves Brussels sprouts. I had thought to make two separate dishes, but as I was looking at recipes on-line I saw that several combined these vegetables. For me ham calls for Southern (U.S.) cooking and it is not a Southern recipe if it doesn’t have bacon.

Karl’s Strawberry Vinaigrette Cauliflower and Green Beans
I used half a head of cauliflower in the soup I was making this Sunday. I decided that I would make a side dish with the rest, but it was not quite enough to feed five people. I also had some green beans, left over from earlier in the week, but also not enough for a separate dish. Finally, the strawberries I bought on Saturday needed to be used up, because they were quickly starting to go bad. Of such happen stance, a new dish is created.

Karl’s Cauliflower Swiss Au Gratin with Crispy Bacon
My family likes my cauliflower au gratin. I try to switch things up by using a different cheeses. This time it is baby Swiss cheese rather than emmentaler.

Today is Eilene’s 18th birthday. Her mother is in Chicago. Her sister is in Peru. She had school and work all day. She will have her real party later next week. To celebrate the day, she is having some friends over and she requested mac & cheese.

Karl’s Roasted Cauliflower Leyden au Gratin
Jan’s first fieldwork was with the Kwinti Maroons of Suranam. To follow up on the records of this people she had to spend some time searching the colonial records in Holland. While she was there she fell in love with Leyden cheese, which is a Gouda cheese with cumin seeds.
