Claudia’s Pumpkin Bread

Before I left home for the first time, I sat down with the recipe box of my mother, Claudia, and wrote down my favorite dishes.  This is the original recipe. I, of course, had to make a few changes when I made it.

Note: That is actually my loaf, but mother’s looked very much the same—truth in advertising.

Claudia’s Pumpkin Bread

Ingredients

3½ cups flour
3 cups sugar
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1½ tsp. salt

4 eggs
1 cup cooking oil
2 cups canned pumpkin

1 cup walnuts (optional)

Directions

1. Blend all dry ingredients.

2. Add eggs, water, and pumpkin.

3. Put mixture in a greased loaf pan and top with walnuts.

4. Bake at 375° for 1 hour and 45 minutes.

5. Cool before slicing.
