Karl’s Broiled Savory Salmon

Broiled salmon has become a go to weekday dish when I need a fast meal for the family. Salmon can be canvas to express yourself—its strong flavor is complimented by a wide variety of possible herbs, spices and glazes. Frequently, I start with a glaze of one of my fruit jams—lemon or orange marmalade—but today I chose to use savory. Savory is an herb similar to sage.

Karl’s Orange Dinner

In the continued effort to make meals for Jan that she doesn’t have to do any biting—she has two front tooth temporary caps—I suggested salmon for dinner. She thought yams were a good soft starch to go with the fish. She then suggested that this was an Orange Dinner.

Karl’s Roasted Sweet Potatoes

Usually, I simply throw a large sweet potato into the oven and roast it whole. My diners may then cut off as much or little potato as pleased them. Since I never did anything more than prick the potato with a fork, I have never posted this dish, because it is hardly a recipe.

Karl’s Moroccan Couscous

I had decided to make Moroccan chicken wings for this Sunday’s dinner. Couscous is the obvious starch to go with them. Since I was using Ras el Hanout—a Moraccan spice blend—for the chicken, I thought it would also work well with the pasta.

Karl’s Lemon Ham Steak

When Safeway has a half price sale on hams (after a holiday) I buy a half a ham and cut it into ¾ inch ham steaks to freeze for later. A ham steak is pretty much just a slab of meat. The trick is what glaze do you put on it to dress it up. I have been experimenting with ways to use my marmalades—in other ways than just slathering it on toast and pancakes in the morning.

Karl’s Meatloaf with Orange Marmalade Sauce

Jan requested that I make meatloaf for dinner. Both Jan and Eilene like the outsides of the loaf  to have plenty of “crusty bits.” One way to please them is to make mini-meatloaves. A second, easier, way is to not make the loaf too thick—a low thin loaf. Add some fry bread and a salad and you have a really nice meal.

Karl’s Weekday Quick Beef Chili

While I like slow cooked chili with tender chunks of beef, I sometimes just want a quick meal for a weekday. While I have been known to simply use a brand name chili, sometimes I like to go just a step further. This may take a few more minutes than simply opening a can, but the flavor is worth the effort.
