Wife Jan is headed for Burning Man again. Last year I sent some of my four chile chili powder. This year, I thought to make a unique blend for the event. Over time, I have collected several chile powders from around the world. Balancing the heat and flavors I ended up with a six chile blend.

Karl’s International Six Chile Chili Powder for Burning Man
Note: In total Jan and I created 7 new recipes for this year’s Sage Camp at Burning Man: Pancakes, saag pilau, za’atar orzo, mashed potatoes, tabbouleh, a new chili powder blend, and a signature cocktail.
Karl’s International Six Chile Chili Powder for Burning Man
Ingredients
½ Tbs. Pimentón de la Vera Dulce (smoked Spanish paprika mild)
½ Tbs. Hungarian paprika sweet
1 tsp. New Mexico hatch chile powder
1 tsp. Mexican ancho chile powder
1 tsp. Turkish urfa chile powder
⅛ tsp. Basque piment d’espelette
1 tsp. Sichuan pepper
1 tsp. black pepper
1 tsp. Kosher salt
Directions
1. Put all of the ingredients in a spice grinder and process to a fine powder.
Note: Makes about 3 tablespoons.
