When Safeway has a half price sale on hams (after a holiday) I buy a half a ham and cut it into ¾ inch ham steaks to freeze for later. This is later. The French girl is still with us and I decided to make ham steak, parsley potatoes and coleslaw for dinner.
A quick weekday meal does not have to be bad or uncaring. You can put just as much love and though into food that does not take a long time to prepare as something that you labored all day on. When the hungry family sits down they simply want hot flavorful food waiting for them.
Karl’s Ham Steak
Ingredients
2 lb. ¾ inch ham steak
1 Tbs. brown sugar
1 tsp. Dijon mustard
1 tsp. apple cider vinegar
20 cloves
Sprig parsley
Directions
1. Pat ham steak dry and put it on a small lipped baking sheet.
2. Mix the brown sugar, mustard, and vinegar into a paste and spread it over the top of the steak.
3. Spear the whole cloves into the steak.
4. Broil the ham steak for 15 minutes on the middle rack of the oven.
Tip: Do not leave the steak under the broiler too long or the meat will turn tough and dry.
5. Put the steak on a serving plate and tent with foil.
6. Pour the pan juices into a small pan and reduce them to a thick sauce over a high heat, about 10 minutes.
7. Pour the pan sauce over the ham and garnish with parsley.

The smell when that comes out of the oven… Mmmmm!
