I am making mojo carne asada tacos and I wanted a salsa that would match well with the Seville sour oranges. It seemed logical to replace the usual lime juice or lemon juice with Seville orange juice. It turned out to be a good choice.
Karl’s Salsa de Seville
1 medium beefsteak tomato, finely diced
¼ cup red onion, finely diced
1 Tbs. jalapeño chili, minced
1 clove garlic, crushed
2 Tbs. fresh cilantro, minced
1 Tbs. Seville sour orange juice, fresh (or lime juice)
1. Mix all of the ingredients in a small bowl.
2. Let them meld for one hour at room temperature.
