Miriam was specific on what sauces she wanted for her kofta. She wanted a sauce with kefir, mint, and lime. The recipes on-line were either too simple or had way too many ingredients. I wanted something that was cooling, clean, and fresh.
After Dinner Note: My dinners decided that combining this sauce with the Karl’s Pomegranate Chili sauce was the wining combination.
Karl’s Kefir, Lime and Mint Sauce
Ingredients
1/3 cup kefir
¼ cup fresh mint, minced
2 Tbs. lime juice, fresh (zest and juice of one lime)
2 tsp. honey
½ tsp. lime zest
½ tsp. black pepper
Pinch Kosher salt
Directions
1. Put all of the ingredients into a small bowl and mix well.
Tip: I found that an 8 ounce jam jar was the perfect container to mix the sauce.
2. Let the sauce meld for at least 20 minutes at room temperature.
