This Sunday is Mother’s Day and the following day is Miriam’s birthday. Jan requested something with avocado and Miriam wanted a fruit salad. Most weekends we have Sunday dinner, but Chris wanted to take his wife out for her birthday, so we are having brunch this weekend.

Karl’s Lime Curd
Adapted from a Fine Cooking recipe

Karl’s Kefir, Lime and Mint Sauce

Karl’s Jamaican Lime Potatoes with Green Mango
I am making barbequed Jamaican chicken this weekend and, with fewer restrictions to my cooking than normal, I can pack my dishes with fruit. Parboiling is a way to speed up the cooking process. Warm half-cooked potatoes absorb more of the marinade and roast in less time. Potatoes burnt on the outside and raw on the inside is not the dining experience that you are looking for.
Note: Unless that is how your mother made them. I had a friend in college and his mother cooked just that way. Of course, he also thought that a frozen submarine sandwich was haute cuisine.

Karl’s Roasted Brussels Sprouts with Lime and Chives
With the French girl here every day seems like a challenge meal day. I decided I needed a vegetable side dish to go with my chicken and faro. I have not made Brussels sprouts in a while and Jan really loves them.
