Jan loves lemon curd, so a while ago I made some with Meyer lemons. It worked out so well that I have made it a couple of times. It is really tasty, but it does not last or keep long.

Miriam was specific on what sauces she wanted for her kofta. She wanted a sauce with kefir, mint, and lime. The recipes on-line were either too simple or had way too many ingredients. I wanted something that was cooling, clean, and fresh.

Karl’s Jamaican Lime Potatoes with Green Mango

I am making barbequed Jamaican chicken this weekend and, with fewer restrictions to my cooking than normal, I can pack my dishes with fruit. Parboiling is a way to speed up the cooking process. Warm half-cooked potatoes absorb more of the marinade and roast in less time. Potatoes burnt on the outside and raw on the inside is not the dining experience that you are looking for.

Note: Unless that is how your mother made them. I had a friend in college and his mother cooked just that way. Of course, he also thought that a frozen submarine sandwich was haute cuisine.

Karl’s Poached Chicken with Cilantro and Lime Farro

“True” Farro (Triticum dicoccum) is a Tuscan wheat. One source I read said that this is the grain that the Roman Legionnaires marched on. It is a marvelous grain to use in any dish that you would normally use rice or barley.
