I wanted a side salad to go with my Moong dal with shrimp.

Karl’s Carrot Ribbon Salad with Lime Dressing

Ingredients

Dressing

2 Tbs. vegetable oil
½ tsp. lime zest
1 Tbs. fresh lime juice
½ tsp. sugar
pinch black pepper
pinch Kosher salt

4 medium carrots, mixed colors
½ cup cilantro leaves, coarsely chopped

Directions

1. Mix the dressing ingredients in a small lidded jar. Let the dressing meld, shaking frequently.

2. Peel the carrots into three inch ribbons.

3. Mix in the cilantro and pour the dressing over the vegetables.

4. Toss to coat and serve.
