Karl’s Cucumber Apple Salad with Thai Lime Dressing

Wife Jan asked for chicken satay for dinner. Satay needs a salad. Most recipes on-line suggest a cucumber salad, but one suggested adding apples. The dressing is more Thai inspired, rather than something that would be served in Thailand.

Karl’s Cucumber Apple Salad with Thai Lime Dressing

Karl’s Cucumber Apple Salad with Thai Lime Dressing

Ingredients

Dressing

2 Tbs. peanut oil or a neutral oil
1 ½ Tbs. lime juice
¼ tsp. lime zest
1 Tbs. rice vinegar
1 Tbs. Thai fish sauce
½ tsp. local wild flower honey
⅛+ tsp. Thai roasted red pepper paste

1 large Japanese cucumber, cut into ⅛ inch slices
1 large Jazz apple, cored, quartered, peeled, and cut into ⅛ inch slices
¼ cup green onion, green parts only, sliced finely

Directions

1. Put all of the dressing ingredients into a small lidded jar and shake well.

Tip: Let the dressing meld for 15-20 minutes, re-shaking it occasionally.

2. Put the cucumber and apples slices in a bowl and add the green onion.

3. Pour the dressing over the salad and toss to coat.

4. Serve slightly chilled.
