Karl’s Spinach Salad with Lime Tarragon Dressing

I did a ham steak and roasties for Sunday dinner and I decided that I needed more green vegetables. I had a bag of baby spinach and a beefsteak tomato, that I had forgotten to add to a previous dish. Checking for what else was in my kitchen I found some cucumber, celery, and a lime. A quick chop and shake and voilà.

Karl’s Mandarin Sweet Potatoes

I have pretty much found my preferred way of making my Thanksgiving turkey. I use Thanksgiving dinner to create new and interesting sides to go with the bird. Today, I was inspired to make a new twist on sweet potato casserole using the mandarin marmalade I made a few weeks ago.

Jan’s Cocktail Cranberry Sauce

While I have many recipes that I tinker with, wife Jan has her own dishes with which to play. She really likes cranberry sauce, but she is still looking for the perfect recipe—sauce 1, sauce 2, sauce 3. She felt that sometimes adding ground spices left some of her sauces “gritty.” This Thanksgiving she decided to use a cocktail of spice/fruit flavored liqueurs.

I have learned over time that you can make marmalade out of any citrus fruit. Jan had asked me to buy some mandarin oranges, but she was having trouble peeling them with her broken arm. I decided that I needed to use them up before they spoiled.
