Karl’s Greek Dolmas

Eilene trimmed our grape plant—it was starting to overrun the fig tree. I looked at all of these fresh grape leaves and thought dolmas! I have made them with bottled preserved leaves, but I am sure they are even better with fresh leaves. When you say “dolma” you have only said “stuffed thing.” What is stuffed and what you stuff it with can cover a world of possibilities.

Karl’s Greek Lemon Rice with Pearl Onions

A while ago I discovered the secret to restaurant quality Mexican rice. Like most Americans, I had been putting all of the ingredients into the pot with the raw rice and cooking everything together.  Sometimes the rice would come out perfect, but most of the time it would come out as a sticky mess. The secret is to cook the rice separately and then stir it into the sauce.

Karl’s Mediterranean Wild Rice Pilaf with Chicken and Shrimp

Eilene has settled into a routine of a video night on Thursday. Three to five of her friends will show up to watch the Lord of the Rings or Game of Thrones or whatever they are into that week. I, of course, am delegated to feed the masses. It is a struggle to think, “What will I feed several starving teenagers this week.”

The rest of my meal is so fancy, plain rice seemed bland. A few weeks ago I made confetti rice with Chinese chives. That technique should work just as well with scallions (green onions).

Karl’s Wild Rice Pilaf

This is one of those recipes where I took a cooking technique from another recipe that completely changes the dish.  I have been making variations of this dish for most of my cooking life, but it rarely came out how I knew it should be.  For me this has been a dish in constant evolution, I do not think I have ever made it the same way twice.  This is the first time I have even written it down.
