Sister Grace stopped by this Sunday. Of the several options I gave her for dinner was spicy chicken and pan fried noodles. While this dish is a lot of work, it is one of my family’s favorite meals.

My sister Karen has several fruit trees in her yard that produce far more fruit than she and her husband can possibly eat. She came to the same decision that I made with my marmalade that she could make Christmas gifts with them. This year she sent us apple butter.

I did a ham steak and roasties for Sunday dinner and I decided that I needed more green vegetables. I had a bag of baby spinach and a beefsteak tomato, that I had forgotten to add to a previous dish. Checking for what else was in my kitchen I found some cucumber, celery, and a lime. A quick chop and shake and voilà.

Followers of my blog may have noticed that I have not posted many recipes in the last month. It is not that I have stopped cooking—in fact, my desktop is covered with pictures of the dishes that I have made. However, as well as the business of cooking for the holidays, I have been suffering from a bit of writer’s block about what to say about the dishes. Many of my recent were simply slight variations of past posts. Other dishes were seat-of-the-pants recipes—what can you write about when you are grabbing ingredients as the spirit takes you?

Note: Life has been a bit chaotic for the last few weeks, so I am way behind on posting some of my recipes. I have still been cooking and scribbling notes, but organizing them into something anyone else would understand has been slow.

Thanksgiving’s Dinner
This was a Thanksgiving of two turkeys. Daughter Miriam had gone off with Chris for Thanksgiving with his mother. As a result, we decided to have the feast on the following Sunday. On Thanksgivings Day, Jan though it would be a good opportunity to have two of her half-brothers meet for the first time. Continue reading

I have pretty much found my preferred way of making my Thanksgiving turkey. I use Thanksgiving dinner to create new and interesting sides to go with the bird. Today, I was inspired to make a new twist on sweet potato casserole using the mandarin marmalade I made a few weeks ago.

While I have many recipes that I tinker with, wife Jan has her own dishes with which to play. She really likes cranberry sauce, but she is still looking for the perfect recipe—sauce 1, sauce 2, sauce 3. She felt that sometimes adding ground spices left some of her sauces “gritty.” This Thanksgiving she decided to use a cocktail of spice/fruit flavored liqueurs.

We have had company for the last several days, so I wanted a Sunday dinner that was not hours of preparation. An American standard meal of meatloaf, potatoes, and green beans seemed like a good idea. Of course, I could not make it that simple I had to get spontaneously creative.

Before I left home for the first time, I sat down with my mother’s recipe box and wrote down my favorite dishes. The recipe below is all that was written on both sides of my mother’s 3 x 5 card. When my siblings got together to combine all of the recipes we saved, one of my sisters had a different variation our mother uses of this iconic 1950’s American staple.
Note: I have not made this dish this way in years, so I do not have any pictures of it. Continue reading
