Jan is having her stitching friends over for a Christmas get-together. She requested a clay pot chicken, something with noodles and a vegetable soup. As I thought about what dishes I would make the theme became, sort of, Italian.

Karl’s Refrigerator Chicken Soup III
This is a dish that I make every few months. When I make a chicken dish, I frequently buy whole chickens and cut them up myself. I cut out the back and freeze the necks, wing tips and any trimmings to make chicken stock.

Karl’s Pollo Picante Samsa
The other day, Eilene complained that it has been a long time since I have made samsa. I have filled these baked pocket breads with lamb and spinach in the past and they are very popular in my house. I thought about mixing the lamb and the spinach versions, but Jan rejected that idea.

Writing this blog really pushes me at times. It makes me feel that I am failing if I do not do my best at every meal. Once upon a time I could make a regular meal, now I am constantly thinking, “What can I do to make this meal different?”
