Karl’s Cajun Salsa

I had decided to blend Cajun and Mexican cuisines to make chicken tacos. Tacos call for salsa. I decided to make a salsa out of the “holy trinity” of Louisiana cooking—bell peppers, celery, and onions.

Karl’s Cajun Salsa

Ingredients

¼ cup celery, finely diced
¼ cup yellow onion, finely diced
¼ cup red pepper, finely diced
½ cup tomatoes, finely diced
¼ cup flat-leafed parsley, minced
2 Tbs. lemon juice
2 tsp. Karl’s Cajun Spice Blend

Directions

1. Put all of the ingredients into a small mixing bowl.

2. Toss well to mix and coat the vegetables with the lemon juice and spices.

3. Let the salsa marinate for 30 minutes to blend the flavors.

Tip: Stir occasionally to remix the ingredients.

4. Serve with Cajun tacos.
