Karl’s Xiao Long Bao (Finishing Off the XLBs)

While the dough is resting set up an assembly station. You will need a floured flat surface and a small rolling pin. Put the meat mix with a spoon on one side, the cabbage pieces—drained and dried—and a steamer basket on the other.

Karl’s Xiao Long Bao (aka XLB or Soup Dumplings)

Xiao long bao (小笼包, literally “little-basket bun”) is the hot new food in San Jose this year—several restaurants have opened or recently started specializing in these Asian delights. XLBs—for short—is a kind of dim sum that falls somewhere between a steamed bun (baozi) and a dumpling (jiaozi). Both of these are usually filled with meat and/or vegetables. Boazi tend to be dry both inside and out. Jiaozi may be moister inside, but are frequently put into a soup. With xiao long bao the hot savory soup is actually already inside the bun with the filling. Son-in-law Chris has challenged me to learn to make this uniquely Shanghai dish.

Karl’s Orange Dinner

In the continued effort to make meals for Jan that she doesn’t have to do any biting—she has two front tooth temporary caps—I suggested salmon for dinner. She thought yams were a good soft starch to go with the fish. She then suggested that this was an Orange Dinner.

Karl’s Quick Turkey Chili

Jan is on a soft food diet—nothing where she has to bite with her front teeth—and I have spent the last two weeks thinking up interesting foods that she can still eat. She decided that chili with small bits  of vegetables and meat would fit the bill. Although I would prefer beef or pork chili, she has asked for ground turkey.

Karl’s Turkey Chili Powder

Jan is on a soft food diet—nothing where she needs to bite something off—and she decided that chili with small bits  of vegetables and meat would fit the bill. Although I would prefer beef or pork chili, she has asked for ground turkey. Turkey is a rather bland meat so I decided to spice it up with some chili powder.

Karl’s Fish Tacos with Sautéed Peppers

This is a recipe that has evolved over time. Originally, my fish taco filling was simply broiled fish with spices. Recently, I have started making chicken fajita tacos—seasoned chicken with sautéed peppers. Jan is always encouraging me to be more vegetable forward—less meat, more healthy vegetables. I decided to try mixing the peppers with the broiled fish. It has turned into a frequent weekday meal at our house.

Claudia’s French Toast Casserole

I posted the recipe for my mother Claudia’s French toast a while ago. For a few people it is a treat, but it is a bit finicky in that you have to soak the bread slices and then cook them two at a time. If you are having a crowd at the table, this leaves some people hungry while they wait for the next batch. My memory is that she made this when we had breakfast company.

Jan’s friends from childhood—she has known Barbara since the second grade—are coming once again for the Quilt Festival. One will not eat anything with chunks of cooked tomatoes and the other will only eat chicken or fish. To top it off, Jan has just had two crowns and needs soft foods like soups.
