Miriam is having a house warming/birthday party this weekend. She asked me to bring a cold soup for the event. However, she does not want any red soups, like gazpacho, because she now has a white carpet. I could do vichyssoise, but that would be too common. I thought about a cold white bean soup, but Chris is on a low carb diet right now. I looked on-line, and nothing I saw really spoke to me.

Karl’s Lemongrass Clear Soup
I had brought some lemongrass, because I was thinking about braising the lamb for my Vietnamese summer rolls in a flavorful broth. I changed my mind to a quick grill for the lamb, but then I was left with the lemongrass. I decided that I what I needed was a soup to go with dinner.

Karl’s Stone Soup with Bread Dumplings
When your refrigerator and freezer are getting cluttered with bits and pieces, it is time to make Stone Soup. This is not entirely in the spirit of the story, but Stone Soup sounds so much better and classier than; “What is in the refrigerator soup?”

Miriam’s Cream of Mushroom Soup
Many people associate cream of mushroom with Campbell’s-assisted casseroles.
I did not grow up with these, so got to discover them as an adult (along with butter and cream). But that handy concentrated glop, even diluted, is nothing like cream of mushroom from scratch. I even convinced Chris of this fact, with this recipe. It’s loosely adapted from 500 Greatest-Ever Vegetarian Recipes‘ wild mushroom soup.

Karl’s Chicken Casablanca Soup
Eilene was sick today so I plan on Chicken soup. Originally I was going to go with my usual French chicken noodle soup and then I noticed the bag of Mandarin oranges on the counter. I had bought these thinking they were Cuties, but they were not as easy to peel. As a result, they were just sitting on the counter getting old.
I went on the Internet looking for some kind of “orange juice chicken soup.” There were surprisingly few hits and fewer that looked appealing or what I had in mind. One that was close was a Moroccan soup that used orange juice. I looked up several Moroccan chicken soups and the spices blends and ingredients that made them Moroccan. Picking and choosing and using what I had on hand I came up with this recipe.
Note after dinner: This was a fantastic combination of flavors. Spicy with being hot. It may seem that there is a lot of spice for a dish this size, but it was perfect. The Mandarin orange juice worked as a secret ingredient (the soup did not taste “orange-y,” but you would have missed it if it was not there). Finally the bulgur thickened the soup just the right amount without turning it into a pasty stew.

Karl’s Baked Potato Soup
I wanted a soup to go with my Uzbek samsa. I had originally thought about a white bean soup, but I have been cooking a lot with beans lately and I thought Jan would object. I noticed that the chive in our garden has come back from the winter and we had some sour cream in the refrigerator (this is not a staple in our house—too high fat). These ingredients started me thinking about baked potatoes. Could I make a soup version of a baked potato? Yes, I could.

Karl’s Italian Wedding Soup
Jan asked for some comforting, warm Italian Wedding Soup. After a brief warm spell, winter just came back to San Jose with a vengeance and there is snow on the brown hills. San Jose is in the south of the Bay Area with hills on both sides, there is a reason they call it Silicon Valley. Locals orient themselves by the color of the hills. The green hills, the coastal range, are always green and west. The brown hills, the Diablo Range, are higher, dryer and east. If there is any snow near San Jose it will be at the top of Mount Diablo.
I did not like any of the recipes on-line; they were either too simple or too complex. Although I generally avoid recipes that are “add can of A” to “can of B,” I am not a food-Nazi. I will use some shortcuts, especially if it is a weekday meal. I looked up what defines Italian Wedding Soup on Wikipedia. The basic ingredients are green vegetables, meat (usually meatballs), chicken broth, and usually some kind of small pasta. I decided to be creative.

Karl’s Navy Bean Soup
The girl’s are still sick so I am still making comfort soups. Bean today, for variety.
I wanted something a bit more than U.S. Senate Navy Bean Soup (beans, onion, butter, ham hock and water), but not the many ingredient soups I found on the internet. Bean soup should always be about the beans. Any addition to the basic recipe should enhance the bean flavor not drown it out.
