Karl’s Beef Bulgogi with Lettuce Wraps

Adapted from a KimchiMari recipe

For this Sunday’s Korean Dinner, I decided to make separate starch and meat main dishes, because my son-in-law is again avoiding starches. I am making beef bulgogi  and a vegetarian japchae. That way my diners can adjust their servings as it pleases them. In addition I am serving three vegetable sides: chive stem kimchiKorean cucumber salad; and a Korean bok choy dish.

Karl’s Salmon Lettuce Wraps with Raspberry Radish Slaw

Jan has been working 70-80 hour weeks lately—if only she would get paid for some of that overtime. It is hardly surprising that she has ended up working on our anniversary. Today is Jan and my 33rd anniversary. We are having the major celebration with cioppino tomorrow with the kids, but there is still tonight’s dinner to make special.

Karl’s Mongolian Lamb Lettuce Wraps

The Cantonese word for lettuce (生菜, san1 choi3) sounds like rising fortune. Lettuce wraps are an auspicious dish to serve on the New Year. These wraps can be filled with anything you would like to put in them. Lamb is an auspicious dish for my family—it is kind of a Lueck thing. I plan to fill my lettuce wraps with Mongolian lamb.
