Jan is on a soft food diet—nothing where she has to bite with her front teeth—and I have spent the last two weeks thinking up interesting foods that she can still eat. She decided that she could handle chili, but tortillas would not work. She likes bread pudding, so we agreed that I could make a soft cornbread pudding to serve on the side.

Jan likes flax bread, but because of her oral surgery she did not eat the loaf that I bought her last week at the Farmer’s Market. The loaf is now stale. It is either throw it away and waste the bread or do what cooks have been doing with stale bread for centuries, bread pudding.
When Jan made her bread pudding, her plan was to divide the recipe into two. One small pudding for our breakfast and another for dinner over at Miriam’s tonight. Because she slept in this morning, she did not think she would wait for the pudding to bake before she had to go to the gym. I suggested pancakes.
