Karl’s Micro Lemon Ginger Marmalade

Every Christmas for more than the last decade I have made marmalade as a giveaway. a few years ago I started making special batches of intense jams that contained only the zest and juice of the oranges. This Christmas I managed to give away all of my orange marmalade with more people needing gifts. I decided to make a small batch of lemon marmalade to fill the gap. For some of my marmalades, I thought to add ginger to the oranges. This turned out to be quite popular. While I have made plain lemon marmalade, this time I decided to add ginger to the lemons.

Karl’s Ginger White Peach Jam II

Wife Jan has started research for her next book and is interviewing the denizens of Silicon Valley again. She cannot afford to pay the people who talk to her, but she wanted to show her appreciation for taking up their time. She asked me to whip up some jam to give them. It is stone fruit season, so white peach jam seemed appropriate.

Karl’s Ginger Infused Sugar

Years ago, I created an orange infused sugar that was so good that it became a staple on my counter top—a jar of this sugar now sits on my counter ready to add as needed to any recipe that would benefit from a sweet citrusy boost. My wife, Jan, asked me why I had never tried this with ginger.

Karl’s Ginger Lemon Curd

Adapted from a Fine Cooking recipe

My neighbor lemon bombed me again (~60 lemons), with a hint that he was looking forward to some more of my lemon curd. When I had processed the fruit I had 14+ cups of juice and zest. If I turned all of this into lemon curd it would get very expensive—19 cups of sugar, 15 sticks of butter and almost 5 dozen eggs, as well as all of the jars to put it in.

Jan’s Five-fold Ginger Pumpkin Pie

Jan usually makes the deserts for our Sunday meals.  She made this to go with my Shepard’s Pie and it is defiantly a keeper.  Her motto is “Never Too Much Ginger!”
