Karl’s Santa Maria-Style Beans II

I am making Santa Maria barbecue this Sunday and this needs a special kind of beans. I finally found a source for heirloom Santa Maria pinquito beans. If you live in the South Bay (San Jose, CA area) it is just a short 30 minute drive down to just south of Gilroy to where the 101 briefly becomes a two lane highway. Garlic World is an overgrown roadside fruit stand that specializes in Gilroy’s primary crop—I love when the wind is out of the south in the morning, it smells of garlic. Garlic World also carries Suzie Q’s pinquito beans.

Karl’s Veracruz-style Fish Tacos II

I am having a crowd over tonight. Stitches is in town so the aunties, Pat and Barbara, are in from Fresno overnight. Miriam and Chris decided to come tonight, so they could see them too. Having more people to dinner means more food restrictions. Pat does not eat pork or beef and Barbara will not touch tomatoes. Miriam needs soft foods and Chris does not eat starches.

Karl’s Veracruz-style Fish Taco Spice Blend II

I thought I would change up the seasoning for my fish tacos. I found some guajillo ground chili. I added that to the mix as well as some coriander seeds. I also decided to eliminate the non-Mexican Indian chili powder.

Note: If you are a Vegan this would go well on grilled tofu or tempe.

Karl’s Lime and Cilantro Shrimp Tacos

Jan needs some soft food today and she has a desire for shrimp tacos. I looked on-line and most of the recipes seemed to be sprinkle chili powder on shrimp, grill, stick them in a taco shell, and bury them with stuff. I knew I could come up with something better than that.

Karl’s Chicken Molé Chili

When I go to all of the effort to make molé, it is such a production that I always make enough for more than one meal. When the meal is done, I package up 3 or 4 quart bags of the sauce ready to add to a quick weekday meal. Jan asked for chicken molé for dinner one day this week.

Karl’s Tacos de Lengua (Beef Tongue)

Jan and Eilene are off in England for a conference so I decided to make beef tongue.  A three pound tongue is a lot for one person to eat, so I am going to make as many variations as I have the tongue and the stomach for. Last night it was simple sliced tongue with mustard. Tonight it is Beef Tongue Tacos.

Whenever I decide to make my own spice blend I do an analysis of the recipes for that blend that others have posted. By comparing ten to twenty different ideas about what goes into a spice blend I get an inspiration about how I should create my own blend. It should be similar, but unique.
