The best known Sub-Saharan chicken stew, at least in America, is Ethiopian doro wot, This is a dish with a long ingredients list—complicated by many of them being hidden inside several spice blends. There are, however, many other Sub-Saharan countries, everyone of which has their own version of chicken stew.

Harissa is a North African condiment of chili and spices. I had never tried it and I thought I would buy a jar of commercial harissa to get an idea of how it was different from other chili pastes. I am afraid it was not a good introductory experience.

Karl’s Portuguese Salt Cod and Potato Casserole
Adapted from a chef Manuel Azevedo recipe
Traditionally this dish is serves as a casserole. Chef Azevedo, born on the island of São Jorge in the Azores, turns this Portuguese dish upside down. This allows the exposed codfish to brown slightly and the layer of potatoes on the bottom to crisp.
