My sister is visiting and I always try to make something special when they come to California. Daughter Eilene brought some Nevis jerk spice back for me and I decided to try it out on some chicken. This left me with the dilemma of what to serve with the meat. Scouting around the internet for “Caribbean side dishes,” I found a recipe that met my needs.

Karl’s Fried Plantains with Seville Sour Orange Sauce

As I was scanning the recipes for Seville sour oranges I saw one for fried plantains. I thought that the plantains would do well with a sweet and sour sauce. I decided that it would make a good side for my taco dinner.

Karl’s Broiled Plantains

I am making Jamaican Chicken salad tonight. For a Chinese chicken salad I would have crunch noodles as the starch. That doesn’t sound very Caribbean, so I decided on broiled plantains instead.
