I am finally getting around to writing up the recipe that Jan created for Miriam’s Birthday. At our house, my mother’s chocolate mousse has become the standard birthday treat. Jan has made several variations of this creamy dessert, for this one she decided that should would add cherry liqueur.

Jan’s Chris’ Birthday Brownie

Adapted from a Rebecca Katz ‘The Longevity Kitchen’ recipe 

Son-in-law Chris’s birthday is this week, so Jan decided to bake him a brownie cake to go with my Moroccan feast. Chocolate brownie cake may not be Moroccan, but Chris loves Chocolate.  Sacrifices must be made.

Jan’s Celebratory Mocha Cupcakes with Vanilla Buttercream Frosting

Adapted from a recipe by Robyn Stone

Eilene had a few friends over to celebrate graduating from high school. Jan decided to make cupcakes to celebrate.  Jan thinks the coffee enhances the flavor of the chocolate, so she will frequently add some to her chocolate cakes. It was a very hot day so the buttercream frosting suffered a bit.

Jan’s Chocolate Sour Cream Bundt Cake with Kalua Whipped Cream

Adapted from a recipe from Bi-Rite Market’s Eat Good Food by Sam Mogannam and Dabny Gough, found on Two Peas and Their Pod

Around our house the birthday options include: cake, pie or mousse. For his birthday Chris wanted cake. So Jan found this Bundt recipe. She thought this recipe had way too much butter, but it was not her birthday. Jan uses Dagoba organic chocolate power for the cake. In Dutch processing alkaline is added to the chocolate power, so she prefers not to use it.

Many Americans like their cakes really sweet. Jan and the kids think that this is just cloying.  For this recipe she cut the sugar by almost half and dropped the sugar out of the glaze all together. She also added a tablespoon of coffee to enhance the chocolate flavor in the cake without adding to the sweetness.
