Karl’s Eggs Benedict Salad

As I said, my wife does not like Hollandaise sauce. When I suggested making Eggs Benedict salad for her Ethno Breakfast, her response was a definite “NO!” I made a curried egg salad for her function, but I still though my suggestion was a good one. I substituted the mayonnaise—usually used in an egg salad with Hollandaise sauce.

Karl’s Rustic Shepherd’s Pie

I have done several variations of shepherd’s pie—1, 2, 3, 4, 5, & 6. The traditional recipe calls for a stew covered in mashed potatoes. For this dish, I decided to try a break from tradition and—instead of mashing the potatoes—covered the stew with my mother’s parsley potatoes.

Karl’s Gruyère Melted Cheese Sandwiches for a Crowd

Daughter Miriam asked for tomato soup and melted cheese sandwiches for Sunday’s dinner. She was quite particular about what she wanted on the sandwiches—melted Gruyère cheese with fig spread and Japanese mayonnaise. She had recently had a Blue Apron order that combined these ingredients.  I suggested that if she was going to have all that, that you should throw in some Dijon to top it all off—she agreed.

Karl’s Ahi, Avocado, and Green Onion Futomaki 

My wife Jan has her college friends staying over the weekend. Her friends come with a long list of food restrictions—no wheat, rye, barley, tomatoes, citrus, or lactose—so it is quite the challenge. Japanese cuisine tends to have few of the ingredients I needed to avoid. I decided I would make miso soup, sushi, and a selection of Japanese pickles—cabbage and mixed vegetables.
