I have a problem with casseroles. In the forty years that Jan and I have been together, I have made maybe three tuna casseroles. Last month, bowing to pressure from both Jan and Eilene, I made a seafood casserole. They both really liked this dish. They both had seconds and barely left enough for two more servings as their lunches.

Karl’s Creole Gumbo
The kids are not coming over this Sunday and Jan wants to go to a movie. Instead of my usual feast I will be making a late Sunday lunch. I finally settled on gumbo, a Louisiana signature dish.

Karl’s Seafood Bisque

Safeway had a sale on frozen crab legs last week and I thought I would make a crab something. Jan was not feeling like crab at the time so I left them frozen. I remembered that I had them and I thought I would make seafood bisque today.

Karl’s Mediterranean Wild Rice Pilaf with Chicken and Shrimp
Eilene has settled into a routine of a video night on Thursday. Three to five of her friends will show up to watch the Lord of the Rings or Game of Thrones or whatever they are into that week. I, of course, am delegated to feed the masses. It is a struggle to think, “What will I feed several starving teenagers this week.”

Karl’s Szechuan Salt & Pepper Shrimp III
I needed a protein dish to do with my leek soup. I started making these only a few weeks ago, but they are so good that I know my family will eat them whenever I make them. The last time my son-in-law, Chris, mentioned that they needed la jiao (hot pepper) to go with the hua jiao (flower pepper).
