Karl’s Keto Crab Cakes

The kids are feeling a bit toady after weeks of holiday eating and have decided to go on a keto/Atkins low-carb diet. These diets are vegetable/protein forward. Usually, I go with dishes where I can serve the starch on the side, for those who wish for more.

Karl’s Crab and Shrimp Cakes

A few weeks ago, I made fresh salmon patties. I did not want to make the same thing, but Jan really liked them except for the fact that that they were not made of crab. Crab is very expensive, so I thought I would stretch it with some shrimp.

Karl’s Corn, Poblano and Crab Tamales

23andMe is a powerful, but dangerous tool. Jan has assumed she had one father, when in fact there were two. According to her genes, Jan’s ancestry is ¼ Iberian and ¼ Cora—although they refer to themselves as Naáyarite—an indigenous tribe that lives in the mountainous region of along the Jalisco / Nayarit border of north Pacific coast Mexico—although much of Jan’s extended family has moved to the coast.

Karl’s Cracked Crab and Crackers

This is hardly a recipe, but it is a traditional family meal in California. Crab season was late this year, but it has finally become safe to eat the Dungeness crab. I bought three for five people.

Karl’s Tamarind Seafood Curry Soup

Adapted from Serious Eats and Cracking Curries recipes

Son-in-law, Chris, requested a crab curry for this Sunday. It seems to be just past Dungeness season, so there was nothing but very expensive King crab in the stores. I bought some packaged crab meat and stretched it with some cod.

Karl’s Crab and Lobster Bisque

Jan asked for crab bisque for Christmas Eve dinner—she saw a recipe in this week’s food section. Chris is down south, so Miriam is coming over and we will be celebrating just a bit early—the last Hobbit movie and a nice dinner. To make it special, Jan also asked me to add some lobster to the bisque. Miriam’s request for this holiday meal is for potato latke and as a green we have agreed upon a carrot and spinach salad.

Karl’s Crab and Barley Bisque

It is crab season here in California and Jan really likes crab. Many seafood soups include potatoes and—with my diabetes—Jan is encouraging me to use starchy foods that are lower on the Glycemic index. Barley is only 25 on the GI—Russet potatoes are 111.

Karl’s Seafood Bisque

Adapted from a Southern Food recipe

Safeway had a sale on frozen crab legs last week and I thought I would make a crab something. Jan was not feeling like crab at the time so I left them frozen.  I remembered that I had them and I thought I would make seafood bisque today.

Karl’s Potato Soup with Mini Crab Cakes

Eilene still has a sore throat, so I am making soup again. Last night was chicken and pasta so I thought I would head a different direction tonight. Potatoes and crab is on the menu, just for a change in pace, if not texture.
