I pack lunches for Jan and Eilene, so I am often end up making lunch just for myself. Usually this will be some variation of last night’s leftovers. Today’s leftover ingredient is one serving of cold pan fried noodles. Plain noodles beg to be topped with something.

Karl’s Chicken Alfredo Casserole
Eilene’s friends are coming over for their usual Thursday night TV marathon—The Avengers this week. I have made mac & cheese for them several times and I am getting a bit board with it. I decided to do a different cheesy noodle dish using an Alfredo sauce.

Karl’s Spanakorzo (Greek Spinach and Pasta)
I am making Greek barbecued lamb for Easter and I wanted a Greek starch side dish. Found a recipe for Spanakorizo (Greek Spinach and Rice). While I did not copy the recipe, it gave me the idea for a Greek-style pasta dish with orzo.

Karl’s San Francisco Pulao
One of the recent Cook’s Illustrated had a recipe for the perfect rice and pasta pilaf (read Rice-A-Roni™). While this dish is famously San Francisco Italian, its origin is actually Armenia. While the dish made from the box is always passably edible, trying to make it from scratch is usually a disaster—either the rice is underdone or the pasta turns into mush.

Karl’s Lemon Couscous
I am making a Moroccan feast for my birthday dinner. A tajine is frequently served over a bed of couscous. I decided that my vegetable tajine needed a lemon couscous. I looked at several recipes, but they all seemed very shy with the lemon juice.

Karl’s It’s Not a Tuna Casserole! III
Jan got a temporary crown on Monday, so she is still eating soft foods. She asked for It’s Not a Tuna Casserole! for Thursday night’s dinner. This was not my first attempt to reinvent the American tuna casserole into something actually like food.

Karl’s Mushroom Parmesan Casserole
I have a problem with casseroles—as a result of having too many as a child. However, Jan really likes them and she has been asking me to make some recently. Jan is hosting this year’s Ladies Christmas Get-together and some of her friends are vegetarian and noodle lovers. I thought that a mushroom and noodle dish would fit the bill.

Karl’s Chicken Florentine
I am finally getting around to posting the meal I served Jan’s childhood friends last Saturday. This is basically my noodles Florentine recipe with meat added. While this is a dish is a meal in a bowl, I served it with a side of steamed broccolini.

It’s Not a Tuna Casserole! It’s not! It’s not! It’s not!
Jan received some green beans and cherry tomatoes from the SJSU Environmental Studies garden [correction]. There were not enough green beans or tomatoes to make a separate dish. I started to think of ways I could add them to a main dish. I finally decided to use them in a seafood noodle casserole.
