I broiled some salmon for dinner the other night and I had some leftover salmon. While my wife loves tuna sandwiches, she cannot—for some reason—tolerate salmon salad. Since I was having lunch on my own, I decided to make this treat for a quick and easy lunch.

Karl’s Chicken with Buckwheat Noodles

While the women in my life are at school/work, I sometimes have only myself to cook for. Usually this is leftovers from the previous dinner. This time I had only a single cooked chicken thigh. Jan does not like buckwheat noodles—soba—but I do. Some chicken, some noodles, this I can work with.

Karl’s Smoked Salmon and Avocado Toast

About once a week we have what we call “deli dinner”—smoked salmon or lox, bread, cheeses, and salads. We usually get most of the ingredients for this meal from La Villa Italian Deli. However, since it is a family run business, they close for the entire Thanksgivings Day weekend.

We made do by getting our ingredients from Whole Food‘s this week. We had some hot smoked salmon leftover and I decided to use it for lunch the next day. How do you feed three people with only one ounce of fish? I decided to mix it with an avocado and some chives that I had remaining from making Thanksgiving dinner. Jan’s Hot Peanut Butter and Lettuce Sandwich

Jan grew up eating peanut butter and lettuce sandwiches. Instead of the sugary sweet of jam or honey, she prefers the crunch of the lettuce. She also prefers to toast her bread first, for the added flavor of the Maillard reation. I forgot to toast the bread before adding the peanut butter to both slices of bread, so she had me put them in the toaster oven as is. The bread toasted, but the peanut butter became hot and melted. She thought that it went perfectly with the cool crisp lettuce.

Eilene has been asking for latkes lately. She has a friend coming over for dinner, so this seems like a good day to make them. Always trying new things, I decided to use tarragon and replace the usual apple sauce and sour cream with pear sauce and crème fraiche.

Karl’s Open-faced Chicken Salad Sandwiches on Pita Bread

I made chicken stock yesterday, which always leaves me with the problem of what to do with the chicken bits I pick off the neck and back bones. I know that the professional chefs consider this meat “used up” after they have made a stock. They simply discard it as being tough, flavorless, and too much trouble to pick off the bones. As a home cook, I cannot help but think this is wasteful.

Karl’s Dan-Dan Chicken Wings with Noodles

I pack lunches for Jan and Eilene, so I am often end up making lunch just for myself. Usually this will be some variation of last night’s leftovers. Today’s leftover ingredient is one serving of cold pan fried noodles. Plain noodles beg to be topped with something.
