Wife Jan wanted something to go with the soda bread I was making. She decided that I had not made clam chowder in quite a while. One reason for that was that daughter Eilene has become a bit lactose intolerant. The obvious solution was to make Manhattan clam chowder.

Karl’s Middle Eastern Seafood Chowder

Last week, Jan really liked the za’atar corn I made and as I was thinking about a weekday meal I suggested that I could add that spice blend to my seafood chowder. She said that if I did, I should also used yogurt—instead if cream—in the dish. So I did.

Karl’s Portuguese Steamed Clams

Adapted from a Leite’s Culinaria recipe

Happiness for Jan is a pot of steamed clams and/or mussels. Since I am doing a Portuguese feast with a salt cod dish and caldo verde, I thought clams would go very well. The first dish I looked at was roast pork smothered in steamed clams. Jan was quick to reject this. She does not mind a little pork in her clams as a flavoring, but in her mind it is all about the clams.
