This is Jan’s birthday week and around this house birthday celebrations tend to get stretched out for a week. Her birthday is in the middle of a busy week, Wednesday, so her main feast will be this Sunday. I was planning on making her favorite, corn chowder with crayfish.

For weekday meals I have been known to take short cuts, like starting with a canned soup. Usually I boost the “tinned” flavor with some fresh seafood, but my daughter, Eilene, objects—“But fresh is so much better!” I have created a monster.

Karl’s Seafood Chowder with Lobster
I usually make my seafood chowder with the less expensive bits of seafood, bay scallops, cod, small shrimp. Last weekend, I bought 10 lobster tails for Miriam’s birthday and two of my guests canceled. I had two tails that I did not use. What could I do with them to feed three people?

Karl’s Seafood Chowder
Eilene’s friends are coming over to watch Game of Thrones. I have some fish that I have to use tonight, so I thought I would do a seafood chowder. Some of her friends can be picky eaters, so I am leaving out the onion I would usually add to tonight’s soup

Karl’s Chowder with Crawfish and Langoustine
I made corn chowder earlier this week, but Jan suggested that crawdaddy chowder was what Miriam needed—she is feeling sick from the medicine she is taking. She needs high fat and starches to settle the nausea. A bit of spice to cover the metallic taste in her mouth would also be nice.

Karl’s Seafood Corn Chowder 2
Jan’s brother is still visiting and Jan wanted Crawdaddy Corn Chowder. On Sunday the Crawdaddy restaurant does not open until noon. This would push lunch to 2 PM, the time they should start thinking about makeing the drive back to Fresno. I talked her into a variation that does not require a restaurant purchased starter.

Karl’s Crawdaddy Corn Chowder II
We love the crawdads at Crawdaddy on King Street in San Jose, but at $10 a pound (unshelled) it gets very expensive to make a meal of them. Crawdaddy has 4 levels of heat: mild, medium, hot, and fire. We once got their hot and the only thing we have ever had that was hotter was real Thai soup. Their mild is spicy enough for most palettes. To stretch this special treat I use 2 pounds of crawdads as a soup base (which produces about ½ pound of meat) and comes with about 2 cups of their boil sauce which has lots of garlic. To boost the meat content I also add some langoustine and shrimp. The soup with Olive Oil Garlic Bread and Tomato and Cucumber Salad is this meal:
