I have had some slow roasted pork in my freezer for a while. I decided that it was time to do something with it and pulled pork tacos seemed like a good idea. The decision was a popular one with Jan and Eilene.

Karl’s Tofu and Chinese Broccoli Stir-fry
It is a constant struggle to keep week day meals interesting. My mother, Claudia, was a strict budgeter; with 5 kids to feed she had to be. However, the result of this budgeting was that frequently you could tell what day it was by what was on the table. I had the same problem when I worked off shore, “If it is Tuesday it must be T-bone steaks.” No matter how good the food is, it gets boring if it is predictable.

Karl’s Chicken Tacos
Jan and Eilene just got back from England, so of course they are hungry for anything but British food. Jan requested Mexican food. They had actually had very little chicken while they were traveling, so chicken tacos seem the way to go.

Before I left home for the first time, I sat down with my mother’s recipe box and wrote down my favorite dishes. When I made my savory beef muffins I used my mother’s recipe for pizza dough. However I realized that is had also used my mother’s minimalist instructions.

Before I left home for the first time, I sat down with my mother’s recipe box and wrote down my favorite dishes. She would make pizza for dinner almost every Sunday. It was a fight to see who would get left-over pizza for breakfast the next morning. I have changed it some since then, but this is her original recipe.

Claudia’s Parsley Potatoes
I make my parsley potatoes exactly like my mother, with the exception of almost everything. My mother would use White Rose potatoes that she would cut into small pieces. I use whole small baby Dutch potatoes. My mother would use one clove of garlic, one green onion and one tablespoon of parsley. I triple all of these ingredients. Other than that the recipes are exactly the same.

Karl’s Fishyssoise
Vichyssoise is a fancy name for a potato and leek soup that can be served either hot or cold. Not one to leave well enough alone, I started adding seafood to it a couple years ago. It soon became known as Fishyssoise in our household.

Eilene has been studying animal cruelty and how animals are used in the American food chain in her sociology class. As a result, she has wanted a lot of vegetarian meals lately. I could not spot anything online that really appealed to me. Most of the dishes were variations of noodles in sauce or salads. I wanted something different.

Karl’s Navy Bean Soup
The girl’s are still sick so I am still making comfort soups. Bean today, for variety.
I wanted something a bit more than U.S. Senate Navy Bean Soup (beans, onion, butter, ham hock and water), but not the many ingredient soups I found on the internet. Bean soup should always be about the beans. Any addition to the basic recipe should enhance the bean flavor not drown it out.

Karl’s Cold Fighting Garlic Chicken Noodle Soup
All of my girls have colds this week, so I decided to make garlic chicken soup. My mother, like most, swore by chicken soup as a remedy for colds. Garlic is also a natural antibiotic. And although a cold is a virus, it couldn’t hurt.
