Karl’s Corned Beef II

I have finally found a source for really good corned beef. Miriam, however, feels that all corned beef is too salty to eat. I explored ways to “de-salt” my cured meat.

Karl’s Leftovers: Corn Beef Hash

When I make my Sunday meals, I usually make enough for one to three leftover meals. Sometimes this means just the same meal again. Other times I use whatever is left over as the basis for a new dish.

Karl’s Corned Beef

I have never been overly fond of corned beef and cabbage, but like most part Irish-Americans I have usually made it on St. Patrick’s Day.  One reason for this dislike was that—like most Americans—I would go to Safeway and buy the plastic package of bright red meat. This sour meat would be tossed in the pot with potatoes, carrots and cabbage to be boiled to death.

Karl’s New England Boiled Dinner (a.k.a. Corned Beef and Cabbage)

Chris requested New England Boiled Dinner for his birthday. According to Wikipedia: This is a “traditional New England meal, consisting of corned beef, or a smoked “picnic ham” shoulder, with cabbage and added vegetable items, often including potatorutabaga, parsnipcarrotwhite turnip and onion.” This is one of the original American “one pot meals.”

Karl’s Corn Beef Hash

One of the joys of a St. Patrick’s Day meal of corned beef and colcannon is having corned beef hash the next day. In New England, they add beets to make it “Red Flannel Hash.” Personally, I think this is gilding the lily and not something a Californian, like myself, would be inclined to do.
