For wife Jan’s birthday, I am making carrot salad. Daughter Miriam is having trouble chewing and eating carrots might be a bit hard for her. I decided to make a tomato and cucumber salad with tender greens just for her.

Karl’s Caprese Salad II

Jan likes caprese salad, which is tomatoes, mozzarella, onion, olives and basil in a light vinaigrette. Usually I go to La Villa, a very good Italian deli in Willow Glen and pay through the nose for a very small portion. While La Villa makes a good salad, I decided that I could make it cheaper and fresher.

Karl’s Caprese Salad

Jan likes caprese salad, which is tomatoes, mozzarella, onion, olives and basil in a light vinaigrette. Usually I go to La Villa, a very good Italian deli in Willow Glen and pay through the nose for a very small portion. While La Villa makes a good salad I could make it cheaper and fresher. Today I noticed that we had a lot of tomatoes in our garden that were just ripe, and I thought, “Gee, why don’t I make my own?”

Karl’s Timitam Salata (Ethiopian Tomato Salad)

Adapted from Ethiopian Food

A cool salad is the perfect counter point to all of the spicy stews and is the standard complementary dish for an Ethiopian feast. It may not be “Ethiopian,” but this salad cries out for garlic and just a bit of spice.
