Karl’s Two Bean and Cucumber Salad

Daughter Miriam has been sick lately and cannot eat anything in the pepper or lily families— no chili powders, garlic, leeks, onion, or peppers (even bell peppers).  This has made Sunday dinners quite a challenge lately. I decided to barbecue some tri-tip this Sunday and I thought a cold vegetables salad would go well with the beef.

Karl’s Green and Wax Bean Medley

Miriam bought me some really good balsamic vinegar and I decided that I would use it for my Fourth of July dinner. Actually, she bought me two bottles, some Aceto Balsamico Tradizionale di Reggio Emilia (the really good stuff—“do not use this in a salad dressing!”) and some BalsaMela, a Balsamic apple vinegar. I decided to use the second vinegar to dress my bean medley.

Karl’s Quick Four Bean Salad

We rent out house from our friends, Peg and Russ. They live in Texas. This morning, they texted that they were in San Jose and could we get together? We invited them over for a last minute Fourth of July BBQ.
