Karl’s Cinnamon Blueberry Waffles

Adapted from a Martha Stewart recipe

I woke up this morning thinking, “Waffles!” As much as I like to cook, breakfasts have not been a high priority for me. My secret sin is that my morning pancakes and have always come from a box. Recently, I learned how easy pancakes and waffles from scratch were to make. I have made cinnamon waffles and blueberry waffles, today I decided to combine the two recipes.

Daughter Eilene just got a dental implant and is on soft foods for a few days. She is getting tired of soups, so I thought I would make a savory rice pudding. Looking on-line, I couldn’t seem to find anything that was even close to what I had in mind—herby, super-eggy, and filling.

Karl’s Barbecued Lemon Chicken

Sunday dinners have become a bit of a challenge, since daughter Miriam has been sick with something that prevents her from eating anything in the leek family—garlic, onions, etc. Adapting recipes to be flavorful without these well loved ingredients tests my mettle—laddle?—as a cook. I decided on barbecuing a chicken with a slightly French fine herbs sans chives vibe—sage seemed an appropriate substitute.

Karl’s Pecan Carrot Salad

Wife Jan is very fond of carrot salad. I am making barbecued chicken and Jan has requested a carrot salad to go with it. While the seasoning of the bird is “mostly” French cuisine, I decided to use a more Japanese dressing on the carrot salad. That’s called California Fusion.

Karl’s Taco Stuffed Avocados

Tacos are an almost weekly meal at my house. To keep it interesting I change up the meat—wife Jan likes fish and chicken, daughter Eilene likes pork, and I like beef. I usually make enough taco filling that there is some left over for another meal, if you stretch it in some way. This week Jan spotted a recipe in a magazine for stuffed avocados and said, “make these.”

Karl’s Steamed Artichokes with Lime Dill Sauce

Daughter Miriam has been sick lately and cannot eat anything in the pepper or lily families— no chili powders, garlic, leeks, onion, or peppers (even bell peppers).  This has made Sunday dinners quite a challenge lately. I needed to make something that was both flavorful, but without the things that would make her feel ill.

Karl’s Chicken and Butter Dumplings II

Wife Jan has been asking lately for her ultimate comfort food, chicken and dumplings. I am always trying to improve even my best recipes—a change of spice here, a new technique there. Sometimes I will walk into the kitchen and simply follow my instincts on a recipe that I have made several times before. Occasionally it works out rather well.
