This is a dish that I make every few months. When I make a chicken dish, I frequently buy whole chickens and cut them up myself. I cut out the back and freeze the necks, wing tips and any trimmings to make chicken stock.

Karl’s Chicken Minestrone
Jan, Miriam and Eilene are all going out for a girl’s massage evening. This is part of Miriam’s birthday week. After work, Jan has 20 minutes to eat dinner before she has to take Eilene to meet Miriam at the spa. Jan asked for soup and Eilene asked for minestrone.

Karl’s Szechuan Salt and Pepper Roast Chicken Au Jus II
Some cooks, when they find a recipe that works, lock it in place as “the recipe.” I always have to see if I can make it even better. A couple of months ago I did a Szechuan Salt and Pepper Roast Chicken that what a really big hit, spicy, juicy and a crackling skin to die for. Can I do even better?

Karl’s Buttermilk Roasted Chicken
My usual pattern of having the family over for dinner was disrupted by Captain America. We went to the movie and had deli dinner over at the kids’ place (yes, she’s 28 now, but she’s still our titmouse). I brought the dried meats, bread and cheese, Miriam provided the fruit and veggies.

Karl’s Avgolemono Soup, Greek Egg and Meyer Lemon Soup
Avgolemono soup is a Greek soup that may have its origin in Iberia brought by Sephardic Jews after they were expelled from Spain in 1492. In its simplest form it has only four ingredients: chicken stock, some kind of starch (usually rice or orzo), a souring agent (usually lemon juice, but pomegranate and sour orange juice may also be used) and eggs. While the simple soup may be nice, it would not make a complete meal because it lacks vegtables.

Karl’s Louisiana Red Beans and Rice
Eilene is having her horde of friends over for a Game of Thrones night. I thought I would go Cajun. I lived in Louisiana for a couple of years and I have been craving red beans and rice with hushpuppies.
