I needed a salad for Christmas Eve dinner. Jan really loves carrot salad, but I wanted at least some green veg in the meal, so I added some baby spinach. I have made this salad before as a spinach salad, garnished with carrots. Here I reverse the proportions, a carrot salad garnished with some spinach.

Karl’s Chili Lime Jicama Salad
As I was at the Mexican store, picking up some things for my fish tacos, I saw some jicama on sale. I usually do not make a side salad when we have fish tacos, but I thought why not? I was sure I would think of something to do with it.

Karl’s Crab Cakes with Aioli and Champaign Pickled Radishes
This meal started in a very different place than it ended. In the morning, I suggested to Jan that I make fish that night. Lately, that has meant fish tacos, but I am getting board with that. Jan suggested lobster rolls, but that is too expensive in California. I suggested Langoustine, which are kind of Italian mini-lobsters. When I got to the store, I found no Langoustine and there was not even any lobster.

Karl’s Tomato Cucumber Salad with Quinoa
Miriam has requested a quinoa (kin-wa) salad for her birthday dinner. I have tried to make quinoa before without success; it came out gummy and bitter. I know I have been saying this a lot recently, but Cook’s Illustrated had an article about quinoa a few months ago.

Karl’s Moroccan Salad

I was looking for a salad to go with my lamb stuffed vegetables and this one struck my fancy. The tangy citrus should offset the oiliness of the lamb quite nicely. I chose Cara cara oranges, because they are seedless and the pink color should look nice with the red and white of the radishes. I decided to add some celery for the extra crunch.

Karl’s Japanese Pickled Cabbage and Carrots (Hakusai no sokusekizuke)
I decided to have salmon teriyaki for dinner and the meat and rice needs a vegetable. For Japanese cuisine this usually means some kind of tsukemono (漬物; pickled vegetables). The quickest and easiest method is salt preserving (塩漬け; shinozuke).

Karl’s Cucumber and Jicama Salad
I am having a crowd over tonight. Stitches is in town so the aunties, Pat and Barbara, are in from Fresno overnight. Miriam and Chris decided to come tonight so they could see them too. Having more people to dinner means more food restrictions. Pat does not eat pork or beef and Barbara will not touch tomatoes. Miriam needs soft foods and Chris does not eat starches.
