I am making an Italian “chicken under brick” this Sunday. I needed an Italian vegetable dish to go with it. I based the chicken on a Mario Batali recipe, that Richard May had posted, and this led me to Batali’s recipe for Ciambotta.

Karl’s Roasted Italian Potatoes
I am making “chicken under brick” and a ciambotta. The ciambotta usually contains potatoes, but I have one diner who is on a diet that excludes potatoes. When Eilene heard that there was going to be no potatoes in the meal she said, “No Potatoes!!” To try and please everyone, I decided to make a separate potato dish.

I wanted a side dish to go with my Chinese steamed chicken. Jan suggested one of my cheesy cauliflower dishes. While those are popular in my house, they are not very Chinese.

Karl’s Chili Lime Jicama Salad
As I was at the Mexican store, picking up some things for my fish tacos, I saw some jicama on sale. I usually do not make a side salad when we have fish tacos, but I thought why not? I was sure I would think of something to do with it.

Karl’s Mission Fig Jam
Jan was given a large bag of very ripe Mission figs two days ago. It was far too many to eat before they went bad. I had to think of a way to preserve them.

Karl’s Greek Dolmas
Eilene trimmed our grape plant—it was starting to overrun the fig tree. I looked at all of these fresh grape leaves and thought dolmas! I have made them with bottled preserved leaves, but I am sure they are even better with fresh leaves. When you say “dolma” you have only said “stuffed thing.” What is stuffed and what you stuff it with can cover a world of possibilities.
