Karl’s Drunken Pinto Beans II

Adapted from an America’s Test Kitchen recipe

I am making tri-tip tacos for Christmas and tacos call for beans. I made these a few months ago and they were very popular with my family. The term “drunken” implies that you are using a large amount of an alcoholic beverage in the dish. The trick to keeping it from tasting “boozy” is to cook off the alcohol before adding any water.

Karl’s Orange Infused Sugared Strawberries

When I was a child, my mother Claudia would make sugared strawberries to top our waffles with—but only if it was strawberry season, when they were cheap. She would slice the strawberries and sprinkle a fair amount of sugar over them—as much as a quarter of a cup. Over time, the sugar would draw out the strawberry juices and make a fresh berry syrup to spoon over your waffle. Being diabetic, I have reduced the amount of sugar and, of course, I used my signature orange infused sugar.

Karl’s Green Beans with Green Onions

One of Jan’s students is coming to dinner with her husband and she had asked for (American) festival food. I decided to do a chicken variation of my Thanksgiving turkey and I wanted a hot vegetable dish to go with it. Green beans are always a good choice, because you can steam them to just tender and then set them aside. Reheat them with some aromatics, just before serving, gives you a quick hot vegetable.

I am making Jan’s birthday meal of chicken mole, beans, and rice. That is a lot of meat and starch, but Jan also likes to be vegetable forward. My original idea was for a mango and avocado salad, but for seven people that would either be very small serving for each person or very expensive.

In the continued effort to make meals for Jan that she doesn’t have to do any biting—she has two front tooth temporary caps—I suggested salmon for dinner. She thought yams were a good soft starch to go with the fish. She then suggested that this was an Orange Dinner.

Karl’s Turkey Chili Powder

Jan is on a soft food diet—nothing where she needs to bite something off—and she decided that chili with small bits  of vegetables and meat would fit the bill. Although I would prefer beef or pork chili, she has asked for ground turkey. Turkey is a rather bland meat so I decided to spice it up with some chili powder.
