Karl’s Avocado, Orange and Spinach Salad

It is a weekday meal and I wanted something simple and quick. I decided on broiled salmon and I thought a spinach salad would go nicely with it. I had bought some oranges to make more orange infused sugar and—since that recipe only uses the zest—that always leaves me with the dilemma of what to do with the fruit. Today, I used one for the salad.

Karl’s Refrigerator Chicken Soup II

I make chicken soup with whatever bits I have in the refrigerator, the backbones and wingtips of chickens, leftover bits of vegetables from other meals. This recipe is never the same twice, because what vegetables go into it depends entirely on what I have on hand. I do try to get a balance of colors, starch and flavors, but it is always different.

Karl’s Caribbean Shrimp, Avocado and Mango Salad

Adapted from a Caribbean Pot recipe

I wanted a cooling salad to go with my spicy jerked chicken and this one sounded like a good one.   The mango does not fit into the Ketogenic diet, but Chris can give Myr his mango if he wishes, the rest should be OK for him. I replaced the original grapefruit with orange, because it is less sour and I prefer it.
