Jan’s Sage Camp Cocktail

Wife Jan Is going to Burning Man again this year. Her group of scholars has become an official camp, “Sage  Camp.” Jan decided that a camp needs an official cocktail. Inspired by a cocktail recipe she found online and a recipe for sage simple syrup, she assembled a signature cocktail.

Karl’s Improved Parsley Potatoes

I make my parsley potatoes almost exactly like my mother—with the exception of almost everything. My mother would use White Rose potatoes that she would cut into small pieces. I use small Dutch yellow potatoes cut into larger chunks. My mother would use one clove of garlic, one green onion and one tablespoon of parsley. I triple all of these ingredients. Today, I had some leek left over from making my meatloaf and I decided to add that as well.

Karl’s Chicken Enchiladas

A few weeks ago, I tried to make some enchiladas the way I thought my mother, Claudia, had made them. While this was not one of the recipes that I took down when I left home, I had watched her make them several times. While my enchiladas looked good in the pan, they were hard to serve without them completely falling apart.

Karl’s Avocado, Orange and Spinach Salad

It is a weekday meal and I wanted something simple and quick. I decided on broiled salmon and I thought a spinach salad would go nicely with it. I had bought some oranges to make more orange infused sugar and—since that recipe only uses the zest—that always leaves me with the dilemma of what to do with the fruit. Today, I used one for the salad.

Karl’s Minced Cottage Pie

Jan just had two temporary crowns put in and is eating soft food. While she had smoothies and blended Fishyssoise the first days, she wanted something more substantial by the third day. The last time she had a crown put in, I made her Shepherd’s Minced Pie.

I roasted a chicken with the express intent of having a carcass to make bone broth later in the week. When the kids decided not to come for dinner, I was left with more than the usual amount of leftovers. After the first meal, I made tacos with the breast meat. With the bits that remained I made this soup.

I like slow cooked chili with tender chunks of beef, sometimes I just want a quick meal for a weekday. While I have been known to simply use a brand name chili, occasionally I like to go just a step further. This may take a few more minutes than simply opening a can, but the flavor is worth the effort.

Karl’s Leftover Chicken Fajita Tacos

I had made a chili chicken for Sunday’s dinner and had plenty of chicken to work with in making other meals. If the chicken is already cooked, tacos are a quick and easy weeknight meal. If you have not roasted a chicken, a deli chicken  makes a good substitute.

Karl’s Lemon Ham Steak

When Safeway has a half price sale on hams (after a holiday) I buy a half a ham and cut it into ¾ inch ham steaks to freeze for later. A ham steak is pretty much just a slab of meat. The trick is what glaze do you put on it to dress it up. I have been experimenting with ways to use my marmalades—in other ways than just slathering it on toast and pancakes in the morning.

Karl’s Ying and Yang Cottage Pie

Jan asked for a “healthier” shepherd’s pie for dinner on a weeknight. By “healthier” she meant no lamb or beef and no white potatoes. I decided to use ground turkey as my meat and—since I still wanted a Russet potato topping—I would make a fifty-fifty topping with sweet potatoes.
