This Thanksgiving, I did a deconstructed stuffed turkey. Jan invited one of her former Chinese students to dinner and she had requested American “festival foods.” Since I still have half a turkey in my freezer, I did not want to do another, but I thought I could adapt my recipe to chicken.

Karl’s Deconstructed Stuffed Turkey a la Julia Child & Jacques Pepin

Miriam and Chris went to Boston to be with his family this Thanksgiving. However, my sister, Karen and her husband, were passing through town the day after, so I decided that I would make my feast on Friday. With only five dinners, I felt that “all the fixings” would not be necessary, so Jan made the cranberry sauce and I made green beans and a crust-less pumpkin pie for dessert.

Karl’s Thanksgiving Stuffing II

My Thanksgiving stuffing is based on my mother’ s dressing. I may play around with the other sides and how I cook the turkey, but this is something that I always make very close to the same way each year.   I have made many improvements on my mother’s recipe over the years, but this—more than the turkey—says, “Thanksgiving” to me.

Claudia’s Poultry Dressing

When I left home I copied out my favorite recipes from my mother’s card file. These recipes were limited to what she could fit onto a 3×5 card. They were meant more to remind her how to make a dish, rather than to instruct someone else on how to make them. They were sometimes quite cryptic to the uninitiated. Karl’s Weekday Thanksgiving with Dried Cranberry Sauce

Jan really loves turkey and she has been running her legs off at work (literally, yesterday she walked 7 miles back and forth across campus, as recorded by her Fitbit). I decided to surprise her tonight with roasted turkey, stuffing and green beans, but I wanted to keep it to a weekday’s level of effort.

Karl’s Corn Bread Stuffing for Pork Roast

I am spending hours roasting a pork shoulder to have the pulled pork for tamales on Sunday. I wanted something more than my usual boiled parsley potatoes to go with it. Stuffing came to mind. However, my thanksgiving stuffing is enough for a crowd and it has been a while since I’ve used instant stuffing. Since this will be for pork I am using cornbread and I have reduced the proportions, because this is just for the three of us.
