Karl’s Weekday Barbecued Meatloaf

I have dozens of pictures on my desktop of dishes I that have created and never gotten around to posting. I had wanted to make meatloaf for dinner, but we were in a heat wave. The idea a running a hot oven to add to the heat just did not seem like a good idea. I wondered if I could barbecue a meat loaf on the grill outside. It actually worked fairly well.

Karl’s Spanish Tri-tip with Chimichurri Verde

Daughter Miriam asked for Spanish flavored barbecue for her birthday feast. What came to my mind was a Pimentón de la Vera—Spanish smoked paprika—dry rub. In Spain this kind of seasoning would usually be used on a rib eye steak, but in California we loves us a tri-tip roast.

Karl’s a Bierock and a NZ Pie Walk into a Bar

Sunday, I made New Zealand venison hand-pies, they were very popular. One of the recipes wife Jan really likes is Volga German bierock—savory beef, onions and cabbage in a raised dough bun. She asked me to make them using the shortcrust pastry I learned to use for the NZ pies.

Karl’s Weekday Meatloaf

Wife Jan suggested that I haven’t made meatloaf recently, so I thought I would throw one together. I first learned to make meatloaf from my mother Claudia, but I have moved far awat from that beginning.  Jan has been pushing me to add more vegetables to my dishes, so I planned to make this one more “loaf” and less “meat.”

Karl’s Corned Beef without Garlic and Onions

Sunday was St. Patrick’s Day, and around here that means corned beef and colcannon. Daughter Miriam is off onions and garlic—although she has recently been OK with just a little green onion (see colcannon without garlic and onions). For this meal, I adapted my regular corned beef for one adapted to my daughter’s needs. Most recipes for corned beef include onions and frequently garlic. I decided to replace these aromatics with celery and carrots.

Karl’s Hawaiian Hamburger

Wife Jan asked for Japanese teriyaki burger for dinner. In chatting with the teller in the market he asked if I was going to use pineapple in the dish. I responded that that would make it an Hawaiian burger. Jan said yes to the idea.

Karl’s Rustic Shepherd’s Pie

I have done several variations of shepherd’s pie—1, 2, 3, 4, 5, & 6. The traditional recipe calls for a stew covered in mashed potatoes. For this dish, I decided to try a break from tradition and—instead of mashing the potatoes—covered the stew with my mother’s parsley potatoes.

We have had company for the last several days, so I wanted a Sunday dinner that was not hours of preparation. An American standard meal of meatloaf, potatoes, and green beans seemed like a good idea. Of course, I could not make it that simple I had to get spontaneously creative.

Claudia’s Meatloaf

Before I left home for the first time, I sat down with my mother’s recipe box and wrote down my favorite dishes.  The recipe below is all that was written on both sides of my mother’s 3 x 5 card. When my siblings got together to combine all of the recipes we saved, one of my sisters had a different variation our mother uses of this iconic 1950’s American staple.

Karl’s Sichuan Pepper and Salt Tri-tip

Daughter Miriam has been “off” onions and garlic for several months now. As a result I have been adapting some of my old recipes. The last time I made a Sichuan pepper tri-tip I used a wet overnight marinade with lots of ingredients and garlic. This time, I greatly simplified the recipe and I used a dry rub. This came out very well.
