Karl’s Tofu and Chinese Broccoli Stir-fry

It is a constant struggle to keep week day meals interesting. My mother, Claudia, was a strict budgeter; with 5 kids to feed she had to be.  However, the result of this budgeting was that frequently you could tell what day it was by what was on the table. I had the same problem when I worked off shore, “If it is Tuesday it must be T-bone steaks.” No matter how good the food is, it gets boring if it is predictable.

Karl’s Chicken Pesto with Angel Hair Pasta

A week ago the basil in the garden was beginning to look sad. I harvested what I could and turned it into pesto to preserve it. Jan saw it in the refrigerator and asked for something made with the pesto tonight. I came up with this dish.

Karl’s 40 Clove Garlic Chicken with Mushrooms

It is a constant challenge to make my meals meet all of my family’s food preferences: low fat, keto, soft food, yes mushrooms/no mushrooms, not to mention various allergies. Jan and Eilene are still in England So I am still cooking for one. I got tired of tongue so I froze the last of it. If you ever make tongue make sure there are enough people to eat three pounds of meat in a meal or two.

The best pickled tongue I ever had was at a Basque restaurant in Fresno, California. The worst pickled tongue I ever had was at a Basque restaurant in Fresno. Done right this dish is a Tasty delight. Done wrong it is horrid.

Karl’s Tacos de Lengua (Beef Tongue)

Jan and Eilene are off in England for a conference so I decided to make beef tongue.  A three pound tongue is a lot for one person to eat, so I am going to make as many variations as I have the tongue and the stomach for. Last night it was simple sliced tongue with mustard. Tonight it is Beef Tongue Tacos.

Karl’s Beef Tongue

My mother, Claudia, did not make beef tongue very often, maybe only once or twice a year as I was growing up. Still we did have it and really liked it. I think the reason we did not have it very often is that it requires a long prep time and very slow cooking. With five hungry kids to feed it was just too much trouble to make as anything but a special treat. That is the childhood memory I am chasing.

South Legend’s Home Style Steamed Fish in Fire Sauce

This is not going to be a typical blog post for me. I view this blog as a recipe file for my daughters, Miriam and Eilene, which I allow the rest of the Internets peek in on. Today, however, I feel compelled to write a restaurant review. Myr and Eilene already know and love this restaurant, so this post is for everybody else.

South Legend Sichuan Restaurant

If you are ever within 50 miles of Milpitas, California, you must find and eat at the South Legend Sichuan Restaurant. I have mentioned this restaurant before in passing. Yesterday, we had a great meal there that rivaled the best ones we had in more than a year in Chengdu, Sichuan.
