Sometimes I have a derth of ideas for what to make for dinner. At times like this, I will type “dinner suggestions” into Google and see what comes up. This search produces lists of recipes with pictures that I can scroll through and think, “No, no, no…maybe?”

Karl’s Open-faced Chicken Salad Sandwiches on Pita Bread
I made chicken stock yesterday, which always leaves me with the problem of what to do with the chicken bits I pick off the neck and back bones. I know that the professional chefs consider this meat “used up” after they have made a stock. They simply discard it as being tough, flavorless, and too much trouble to pick off the bones. As a home cook, I cannot help but think this is wasteful.

Karl’s Lemongrass Chicken Soup
When I join my wife for lunch at the university, we sometimes go to Café Pomegranate. While this is primarily a Persian restaurant, sometimes they go a bit wild with their soup of the day. Last week it was lemongrass soup. It was so good that I decided that I would have to deconstruct it.

Karl’s Party Tandoori Chicken Meatballs
Miriam and Chris moved recently and they had a house-warming this weekend. A few weeks ago, I made Tandoori meatballs and I decided to make some “party-sized meatballs” for their gathering. This was made slightly more complicated by their request that these be carbohydrate-free.

Karl’s Teriyaki Chicken Wings
I was making salmon rice for lunch, but I had very little teriyaki salmon left. I decided that I would supplement the meal with some chicken wings. A simple teriyaki sauce and sometime in the oven and presto—lunch.

Karl’s Dan-Dan Chicken Wings with Noodles
I pack lunches for Jan and Eilene, so I am often end up making lunch just for myself. Usually this will be some variation of last night’s leftovers. Today’s leftover ingredient is one serving of cold pan fried noodles. Plain noodles beg to be topped with something.

Karl’s Chinese Chicken with Oyster Mushrooms
Eilene is at a party on a Saturday night and that means that Jan and I can have an ingredient that she doesn’t like, mushrooms. Chicken and mushrooms, a Chinese restaurant standard, came to mind. To go with this main dish, I chose Chinese broccoli as the vegetable, but what was to be my starch? The standard Chinese accompaniment to these dishes would be steamed white rice. However, Jan loves pan fried noodles, so that is where I went. Form a mundane Saturday night meal this had turned into restaurant quality fare.
Karl’s Chicken Alfredo Casserole
Eilene’s friends are coming over for their usual Thursday night TV marathon—The Avengers this week. I have made mac & cheese for them several times and I am getting a bit board with it. I decided to do a different cheesy noodle dish using an Alfredo sauce.
