Karl’s Grape and Mango Fruit Salad

I bought a mango several days ago and it was in danger of becoming over ripe. When I mentioned that I was thinking about making a fruit salad to go with my chicken dinner the response was quite positive. Gathering what fruit I had produced this salad.

Miriam’s Chicken Salad

Miriam has been moving this week and her mother and sister have been helping her. In this situation it is polite to feed your workers, but with the kitchen half packed up it can be a challenge. Takeout pizza is the usual solution, but my daughter is capable of being creative. A little chicken, vegetables, fruit, a bit of mayonnaise and viola you have a salad.

Karl’s Heirloom Carrot Salad with Raspberry Balsamic Vinaigrette

Jan had a Stitching Guild luncheon on Saturday and most of the other people signed up to bring meat dishes. Jan sees her role as to provide a vegetarian option. Normally, I would add toasted pine nuts to my carrot salad, but one of her friends is deathly allergic to nuts.

Karl’s Spinach, Orange, and Fennel Salad

My son-in-law, Chris, is making the main dish this Christmas—his Grandmother’s Boston clam chowder. I provided a spinach salad and fresh oyster crackers to go with it. Miriam made rum balls for dessert.

Karl’s Sichuan Pickle Salad

This is Eilene’s birthday week, so she got to choose Sunday’s dinner. She wanted spicy chicken and pan fried noodles. While this is a meal in itself, I thought that a cold, vegetable salad would be a nice addition to the meal.

Karl’s South of the Border Salmon Patties

Jan wanted something light for dinner. I went on-line for ideas and was surprised what some people—especially the diet cooking magazines—considered “light.” In my mind, anything with pasta is not “light” by definition, but easily a third of the recipes were some form of pasta and sauce.

Karl’s Grilled Plum Guacamole

Jan requested a “light” dinner, by which she meant low carbohydrates. I decided to do “South of the Border” salmon patties. This, of course, called for guacamole. Having already mixed Mexican and Northwest cuisines, I decided to take it a step further and mix grilled plums with my avocado.

Karl’s Caprese Salad 3

I had bought some Ciliegine Fresh Mozzarella—one inch balls of cheese—for my Italian Salad Bar. In the rush to get out the door to deliver it, I forgot to take them out of the refrigerator. Trying to think what to use them for, I remembered that caprese salad is one of Jan’s favorites.

Karl’s “Potato” Salad – Two Ways

These salads are based on my mother’s potato salad, but the kids are coming over and this is a dilemma. They are on the Atkins diet, which means no potatoes. I decided that I would make two almost identical salads: One with potatoes for those of us eating starchy foods and a second with the potatoes replaced with cauliflower.

Claudia’s Potato Salad

I making potato salad for the Fourth of July today, and I am making it based on, my mother, Claudia’s recipe. I have had to make some adjustments—I am not trying to feed seven hungry mouths and—while I remember there being celery in it—there was none listed on her 3×5 card recipe. Another twist is that Myr and Chris are on the Atkins diet, so I decided I would make a second salad—with cauliflower replacing the potatoes—just for them. Continue reading
