Karl’s Caribbean Shrimp, Avocado and Mango Salad

Adapted from a Caribbean Pot recipe

I wanted a cooling salad to go with my spicy jerked chicken and this one sounded like a good one.   The mango does not fit into the Ketogenic diet, but Chris can give Myr his mango if he wishes, the rest should be OK for him. I replaced the original grapefruit with orange, because it is less sour and I prefer it.

Karl’s Cold Sichuan Noodles, California Style

This dish has become my “go to” dish for potlucks (as in “We’re having a potluck. Karl’s going to bring his Sichuan Noodles, isn’t he?)  This is one of the dishes that I included in my niece’s wedding recipe book. Many members of both families provided their best recipes to start off Katie’s married life with good food.

Karl’s Uyghur Carrot Salad

For Mother’s Day, Jan has requested Uyghur Shashlik and Naan for dinner. Normally, if I was making these dishes, I would make a tomato and cucumber salad as the side dish. For me this has gotten to be a bit boring and predictable. I want to do something else.

Karl’s Anniversary Carrot Salad

This week is our 30th anniversary. This weekend Jan mentioned that her favorite salad was carrot. We were at the farmer’s market and she wanted to buy some heirloom carrots for her favorite salad. We thought through how I could possibly not know this after all this time. Jan, apparently, has always loved carrot salad. She buys carrot salad to eat for lunch whenever she has a chance, except when I am with her. If she is at a business dinner and there is carrot salad in the buffet she will take a big scoop, except if I am with her. This, it seems, has been going on behind my back for 35 years.

Karl’s Vietnamese Summer Rolls (Gỏi cuốn)

Jan has gone to three conferences in the last week, a dean’s conference, the Southwestern Anthropological Association conference and a Google conference. As a result, her eating habits have been completely disrupted.  Google especially fed her some very strange things, but one of the things she liked was a Vietnamese summer roll with lamb, instead of the usual shrimp or pork.

You can make summer rolls as a vegetarian dish, but I usually make them with shrimp and/or thin slices of Chinese barbecued pork. The idea of using lamb intrigued me.  Could I make a summer roll with tender, flavorful slices of lamb like I can picture in my head?

Karl’s Tabouleh

Long before you could easily find recipes on the Internet The Complete Middle East Cookbook by Tess Mallos is my go to book for Middle Eastern cuisine.  Like many of my best cookbooks I bought this one at a library discard sale.  It had seen much use before I bought it 25 years ago, but as tattered as it is, it has some great recipes in it. I have made a few changes to her recipe over the year’s but not as many as I make to other dishes.

Our garden produced another spectacular cucumber and I did not want to make the same salad as the last time so I had this in mind when I went to the farmer’s market.  One of the sellers had bags of mixed baby greens and vine ripe heirloom tomatoes. What I came up with is this salad.
