I decided to use the tops of the leeks I was using for my Fishyssoise in a separate dish that Chris, my son-in-law, would eat. He also really likes mushrooms and bacon as well. Making a dish out of these three things fits his keto diet and I wouldn’t mind eating it as well.

Karl’s Celeriac Non-potato Salad
Chris is still on his keto diet and Myr is still on the soft-food diet. Chris is avoiding starches and Myr has been told not to eat salad greens that she would have to chew. As a result, many things that I would normally make of the Fourth of July are off limits.

Karl’s Italian White Bean Dip
This Sunday we will be going over to the kids’ apartment, so I need to make my dishes transportable. Miriam is still on the soft food diet, so she has asked for bean dip. I think I will make two, a white bean dip and a black bean dip. I was thinking of finding a yin & yang serving dish, but I was not able to find one in time for dinner.

Karl’s Caribbean Black Bean Dip

Karl’s Blueberry English Scones

We had leftover blueberries from dessert last night. Jan woke up with, “I wouldn’t mind blueberry scones this morning.” Please note that she never really asked for scones, but that is just her way. I usually make oatmeal scones, but today I wanted to do something different.

We rent out house from our friends, Peg and Russ. They live in Texas. This morning, they texted that they were in San Jose and could we get together? We invited them over for a last minute Fourth of July BBQ.

Karl’s Gobi Musallam Sichuan
My son-in-law was waxing eloquently about Gobhi Musallam. Chris described the dish as a whole roasted cauliflower, an impressive Indian presentation dish, which fits his Ketogenic diet. The recipe is also in-line with the soft food diet that Myr has been put on by her doctor. However, we just had Indian food last week. While I like the idea of a whole roasted cauliflower, there is nothing that says it has to be Indian. What other cuisine could I adapt this technique to?

Karl’s Spicy Stir Fried Cucumbers
I decided that my whole roasted cauliflower would look a bit naked sitting in the middle of a plate. A ring of stir fried cucumbers would make a nice compliment, both in color and texture. This dish would also fit in with Myr’s soft food diet and Chris’ Ketogenic diet.

Karl’s Kalmi Saag Paneer
I went to the Indian market looking for fresh methi leaves, but was told they didn’t have any because it was summer. I had picked up something called “green leaf,” which I was told was very good. Although it looked familiar I didn’t recognize it. I am always one to try something I have not tried before.
Note: I am still not sure that this is water spinach. If anyone out there knows by what other name the Indians call “green leaf” I would appreciate knowing.
