Daughter Eilene had wanted Thai mango rice, but we were ordering dinner from a Chinese restaurant. Mother and daughter went on about how much they liked mango—personally I can take it or leaver it. To please them, I decided to make mango rice pudding.

Wife Jan is going off to Burning Man again. Last year she broke her arm, I hope she comes back in one piece this year. As usual, I am making instant meals for her group. Last year, I made three camp meals—saag pilau, za’atar orzo, and pancakes. This year I added two more—mashed potatoes and tabbouleh. Dehydrated potatoes are pretty bland just on their own, but a few herbs, some chives, powdered cream and butter should work wonders.
Broiled salmon with ginger peach glaze has become a standard weekday meal at my house. The question is what vegetable do I serve with it this meal. Frequently that choice is broccoli, but wife Jan has not been well and broccoli is a bit hard to digest. Jan decided that she could handle green beans, but plain steamed beans is a bit boring. Jan has already decided that she is having no difficulties with mushrooms, so off I went on a spur of the moment creation for two.

When one of my girls has had a rough day they ask for rice pudding. Over the years, I have made many variations—1, 2, 3, 4, 5, 6, 7, 8, 9, and 10. I had bought some shredded coconut for another dish, but when it came time to use it I was not able to find where I had put it away. Having found it I decided to use it in a rice pudding.

Potatoes go well with meatloaf, but cooking them created the same problem. I decided to cook the potatoes on the barbecue as well. Large potatoes, like Russets, can take too long to cook, so I used small Dutch yellow potatoes.

I am making chicken with French flavors and ratatouille for Sunday’s dinner. While wife Jan and daughter Miriam love ratatouille , I am not overly fond of overcooked vegetables. I wanted a potato dish for me, cheesy potatoes—potatoes au gratin—seemed the ticket. I decided to add a bit of a twist on a standby dish and include rosemary.
I recently had a medical procedure that required me to be on a restricted diet for several days—nothing with fiber: no fruit, nuts, vegetables, or whole grains; no beef, milk products, or vitamins with iron. The foods that remained included most of the things that my wife has been trying to get me to give up—white bread, white rice—and white meats—chicken, eggs, fish and pork. How do you make a soft, bland diet taste good?
